Our Huabal Select coffee is from the Cajamarca region, located in the north of the Andean state bordering Ecuador. Here you can commonly find Typica, Bourbon and Caturra varietals. With the highlands in the south and the tropical rainforests in the north these beans grow on several small farms at an altitude of 1700m above sea level. Most coffee farms in Peru are surprisingly small, with an average size of about 3 hectares. These microlots usually produce only a few hundred kilograms of coffee per year, but they are often of excellent quality.
This coffee is fully washed, meaning that after harvest, the pulp is removed and the remaining beans are washed with fresh spring water and left to ferment. Afterwards, the beans are spread out on patios and left to dry in the sun for about 2 weeks.
The resulting coffee is round, balanced, fruity and floral. We have roasted this coffee as a filter to complement its delicate nature and highlight its complexity.
We are excited to be sourcing coffee from Peru as they are fairly new to the specialty coffee world despite the fact that they have good cultivation regions such as the Andean highlands that are situated far from intensive agriculture and industrial coffee plantations.
